Healing Foods: Liver Pate Recipe

Eating liver requires a bit of daring, but according to informed sources it is an incredibly beneficial food for your body. I learned a trick about liver: if you soak it in lemon and garlic for 24 hours before cooking, it dilutes the overpowering liver flavor. However, I did not do that in this recipe. This recipe is adapted from Practical Paleo.

Liver Pate Recipe

  • 1 Pound chicken livers, from organic pasture raised chickens
  • 1 Small onion, chopped
  • 4 Cloves garlic, chopped
  • 2 Tablespoons butter, plus another half cup
  • ½ Cup red wine
  • 1 Teaspoon Dijon mustard
  • 2 Sprigs thyme
  • Juice of one lemon
  • Salt and pepper to taste

In a medium pan, saute the onion in 2 tablespoons of butter until tender. Add the liver and brown. Add the wine, garlic, mustard, thyme and lemon juice, and cook uncovered until the liquid has reduced to about two tablespoons.

Transfer to a food processor and blend the mixture to a smooth paste, adding the additional butter until it reaches a creamy consistency. Add salt and pepper to taste.

Put pate into a shallow dish and refrigerate.

Spread on sliced cucumber, carrots, jicima or walnut halves.
