Nutritious Treasures: Sweet Potato Recipe

It is Fall which is my absolute favorite time of year. This is a repost because it is the perfect time to get into the swing of the holidays with some sweet potato goodness. I hope you enjoy them as much as I do.

Here is a quick and easy way to add some good nutrition into your diet. Although I have always had a love affair with the sweet potato, this recipe is my new favorite way to eat them.

I have a wicked recipe for Thanksgiving Sweet Potato Pie, but there is absolutely no good nutritional value to it. The calories and sugar in one scoop must rival the most decadent dessert on the planet. My family fights over it at the table.

These roasted gems are actually good for you and incredibly delicious. Sweet potatoes are full of beta-carotene and vitamins C, A and B6.

This is a combination of Yams and Sweet Potatoes.

The yams are much sweeter and offer different nutrition benefits to the sweet potato.

Scrub yams and sweet potatoes. Slice into one-inch pieces and rinse.

Heat the oven to 400 degrees and put the roasting pan in with 2 tablespoons of coconut oil. When melted, add the potatoes and salt generously.

Turn them over after approximately fifteen minutes, and cook another fifteen. Test with a fork, they should be crisp on the outside and tender on the inside.

I grate lemon peel over them for a good contrast to the sweetness of the potato.

They are good to snack on the next day, even after being refrigerated.
