Nourishing Food: Coconut Quinoa Recipe

Feeling out of control goes hand in hand with traumatic change or loss. One way to regain a sense of command in your universe is the simple act of consciously choosing what you put in your body. Good food nourishes the body, mind and soul. Here is a nutritious dish that is quick and easy. I make extra quinoa to have on hand because it is a versatile ingredient for any meal. My friend Suzani declared, “This is like a soul satisfying muffin without the junk.”

Quinoa, once called “the gold of the Incas,” was used in ancient times to increase the stamina of the civilization’s warriors. It is known as a “complete protein,”meaning that Quinoa includes all nine essential amino acids.  Quinoa has been shown in studies to provide numerous health benefits: Sustained caffeine-free energy, helps manage stress related hunger, natural antioxidant, contains B-vitamins and minerals, has complete protein, gluten free, lowglycemic index, it is ideal for people prone to food allergies or celiac disease. It is important to rinse the Quinoa before cooking otherwise it will have a bitter taste.

I use granulated honey because it is not as sweet and has a deep, nutty flavor.  Be sure you use ground flax seeds.

Coconut oil varies in flavor A LOT, so if you are not a fan of the taste, try to find one that is mild because there are so many wonderful health benefits. Don’t be afraid if it looks like this when you open the jar.  It will melt when you mix it with the warm quinoa.

Coconut Quinoa Recipe

 ½ Cup Cooked Quinoa, warmed (I usually soak it overnight and cook 2 cups to have on hand)

1 T Coconut Oil

2 T Ground Flax Seeds

1 T Granulated Honey Crystals (honey works too)

2 T Walnuts

1 t Ground Cinnamon (optional)

Mix together and enjoy. You can play with the ingredients for taste.
